1 container of dried sorrel (found at Oakwood Farms)*
1-1/2 lbs. fresh ginger (scraped and shredded)
10 – 12 whole cloves
1-2 cinnamon sticks
1 lb. brown sugar
2 TBSP. lemon juice (Optional)
Combine all ingredients into a 4 qt. container with 1 gallon spring water and bring to a boil
When it comes to a boil, turn off heat and cover container to simmer and seep 24-48 hours or overnight.
When cooled, strain and sweeten to taste.
Note: You can add additional ½ gallon water to remnants after straining and complete the process which can then be added to the gallon already made. Add more sugar as may be needed.
